Angelo's Mom Makes Eggplant Feta Sandwich w Dave's Killer Bread

I wanted to make a recipe with Dave’s Killer Bread, a healthy, organic bread made by Dave Dahl, who spent 15 years in prison. So my mom came up with an eggplant, tomato, onion, basil, spinach, feta cheese, and olive oil sandwich that you bake. Thinking about it now, I would add hot sauce and avocado. But it was quite good and relatively healthy for a sandwich.
